- 8 to 10 Sweet Potatoes
- 1/2 stick butter
- 2 tsp cinnamon
- 2 eggs (these can be left out)
- 1 can evaporate milk
- 1 tsp cloves
- 3 tsp brown sugar
- 2 tsp sugar
- 1 bag of large marshmallows
- Boil sweet potatoes in large stock pot.
Peel potatoes and add to mixing bowl. I leave them a little chunky.
Add all the other ingredients (except Marshmallows) .. add the evaporated milk last.
At this point I taste the potatoes and make sure it doesn’t need anymore sugar or spices. The marshmallows will sweeten it so it doesn’t have to be real sweet.
Pour potatoes in rectangle cake pan (I use glass)… or if I’m taking somewhere I buy a throw away cake or casserole pan. It’s nice to have a lid so the marshmallows can remain looking nice.
Cook for 30 minutes at 375 .. add marshmallows on top and bake until the are slightly brown on top (usually 15 minutes).
Note: you can mix everything ..except the marshmallows and then bake the next day ….that way you have the bulk of the cooking done.
